Jamaican Cornmeal Porridge
Today for breakfast I made something I haven't made in nearly a year! Fred LOVES cornmeal porridge and has been asking me to make it for the longest time now. As you can tell from the picture its super thick! If you don't want your porridge as thick as mine feel free to add more water.
INGREDIENTS
1 cup Fine Yellow Cornmeal
4 cups Water
1 cup Milk
1/2 tsp. Salt
1/4 tsp. Nutmeg
1/4 tsp. Cinnamon
1 tsp. Vanilla Extract
1 can Condensed Milk
METHOD
Mix cornmeal in 2 cups of water.
Bring remainder of water and milk to a boil.
Reduce heat to medium, stir in cornmeal & salt.
(cook time 12 minutes)
Continue stirring until thickened to reduce the chances of lumps.
Reduce heat to low and let the porridge continue to cook until done.
Add nutmeg, cinnamon & vanilla.
Sweeten with condense milk.
Serve hot.
