Curry goat is the one thing that Jamaicans HAVE to have at every major event or gathering. It is possible, that something might be inherently wrong with you, if you don't like curry goat. We're having company over for dinner tonight and curry goat is the one thing that is easy enough yet "special" enough to serve to our guests.
I like to cook 1 pound per adult so I have a little over 5 pounds of meat. 1 pound will be enough for you tonight plus leftovers for lunch or dinner tomorrow. Unlike curry chicken that you can have with literally anything, curry goat, in my opinion, is best had with white rice, and white rice alone. Also, goat takes two times longer than chicken to cook, so patience is needed throughout this process. ... I kept my stove on med-high the entire time.

INGREDIENTS

Your goat meat... You'll have to go to your local butcher or meat store for this. 
Black Pepper
Paprika
Pimento Seeds
Scallions
Thyme
Onion
*Bell Pepper
**Scotch Bonnet Pepper
Potatoes 
Carrots
Spinners
Vegetable Oil
Water

METHOD

  1. Wash your meat with vinegar. If you've seen my "How I Clean My Chicken" video, it's very similar to that.  I like to throw everything in the sink after and then put them  back in the bowl I just washed them to ensure that all the water is out of the bowl and off the meat. 
  2. Begin adding your seasoning. I like to start with curry powder and then everything after.
    I don't measure anything, you just have to look at the amount of meat you have and know how much of what seasoning you want to add to bring out the flavor. Adding too much of one thing will alter the taste. A reason why I don't add things like garlic powder. **If you're eating without kids and love spice, chop up half of a scotch bonnet pepper and add it to the meat. *You can also add your bell peppers here if you want to. 
  3. With gloves on, so you don't stain your nails, rub the seasoning into the meat. Let it sit for at least an hour. 
  4. Add a bit of oil to the bottom of your hot dutch pot, just enough so that the meat doesn't stick to the pan, and slowly add your meat. 
  5. Stir as the meat begins to tighten. When you see juices coming from the meat, fill the bowl you were using earlier to season the meat, with water, and slowly add it to the pot. 
  6. Check on your pot every half an hour to ensure that the water isn't dried out. And if it is, just add more. 
  7. **After about an hour and a half, add an UNCUT scotch bonnet pepper to the pot, this will give it the kick that goat should have without being too spicy, if you din't cut it up in there already. This is also when you'd add your potatoes, carrots, spinners *and bell peppers. Spinners are tiny boiled dumplings. This will help to thicken the gravy. 
  8. Serve with white rice. (or whatever your heart desires)

The school year is coming to an end and we decided to get a gift for Aiden's teacher. This is something that teachers more often than not go out of pocket to purchase year round for their students. And while this may not cover his needs for an entire year, it will help tremendously. On Tuesday, March 31st, Aiden had his first award ceremony! He made me SO proud and brought home FIVE awards! Walking into the cafeteria, the students were beginning to march in. Looking out for Aiden, I spotted his teacher, said hi, saw his friends, smiled, but no Aiden. I walked over to Fred wondering if he had seen him, but still no Aiden. After a couple seconds, I looked up on the platform and there he was. In his navy blue H&M blazer, grey pants, grey tie and grey striped shirt from Children's Place, his Chuck Taylor's and a super hero cape alongside four other kids! To say I was surprised would be an understatement. Before the ceremony began, they recited a cute little number about why they were super.



The ceremony progressed and the awards were handed out, and every time I looked over at Aiden my heart grew ten times bigger. This was my baby, making me proud, my first born, my first TRUE love. The most surprising award that he received was the Principal's award for perfect attendance, since he missed one day of school for Our Wedding. But I guess since it was an excused absence it didn't really count.

As I mentioned in my previous post and also on Instagram a few weeks back, Aiden got invited to attend a STEM school that is near by. He continues to make me so proud and I now see all that discipline and hard work from home, paying off.

The Thursday before Mother's Day, Aiden's school had their annual Mother's Day Tea. This was my first time attending, and seeing my little sweet face up on stage performing was one of the best feelings in the world. In case you couldn't tell from the video, his class did a rendition of The Temptation's, My Girl. It was the cutest thing ever! 


After the performance there wasn't so much of a "tea" as I was expecting, but more of a Doughnut grab. I'm currently PTA President so if he goes back to this school for 1st grade, I'll definitely try to implement an actual tea like event that still won't cut into class time.

It's now been over two months since we got married and this post is way overdue! We got married on February 18th 2016, on our 5 year anniversary. We went to the main courthouse in West Palm Beach which was over an hour away from us but made for beautiful pictures.





The reason why we chose to go the courthouse route is because we are saving for our first home together. Which is a part of our 5 year goals. in 2 years, 2018, we should be closing on a house no later than December, and then, in 2021, exactly 5 years from our wedding day, our 10 year dating anniversary, we'll have our vow renewal. Which will be much bigger than our courthouse wedding.



I had bought my dress the year before online from Shop Akira, it is a white leather spaghetti strap dress with a sweetheart laced neckline. My headpiece is Irresistible Me, and my purse is a replica Chanel 2.55 bag. Fred got his jacket and shirt from Macy's. Aiden Kyle wore blue blazers as my something blue, from H & M. My bouquet and the three boutineers were from A Floral, and because they are faux flowers, are displayed on my vanity. After the ceremony we went to our favorite Italian restaurant, Maggiano's Little Italy, and had an amazing meal with a bottle of wine. The manager noticed that we were celebrating and sent out a huge dessert tray for us on the house. It was the most perfect day. I think I covered all the details, so now, pictures!

DIY Valentine's Day Crayon Hearts

For Valentine's Day Aiden usually sends a Valentine for each of his friends in his class. This year I decided to add a cute heart shaped crayon with each card. I was tagged in a picture on Facebook, and that's where I got the idea from. Now if you google how to make these, the majority of the tutorials require that you have heart shape molds. I didn't have any and was too excited to wait and go get some. So what I did instead was take an old cookie sheet, (which is now dedicated to crafts; If you want you can lay aluminum foil on the bottom of the pan but it probably wont come out as smooth), and my heart shaped cookie cutter. It was super easy and all it really takes is time. 




INGREDIENTS


  • broken crayons
  • cookie sheet or baking pan
  • aluminum foil (optional)


METHOD
  1. Separate your crayons and remove the wrappers. break them up as small as possible.    
  2. Preheat your oven to 200 degrees. Lay your crayons on the cookie sheet. 
  3. Bake for 20 minutes. Remove from oven and let it cool for 15 minutes.
  4. Cut out your hearts and let them cool for another hour before breaking them apart. 
  5. After the hour, break them apart. 
  6. Add a small tag or a coloring page to let the kids know that it's a crayon and  not a cookie or candy lol.

What Do You Mean We're Not Having A Party?

For Aiden's 6th birthday we decided to not have a party. Aiden didn't know how to react at first but we definitely made it memorable. Cake was something we HAD to have and WWE is his current obsession so decorating his room was the next genius idea. It's really the little things that gets Aiden excited so just being able to wear his "Birthday Boy" button to school was everything!


The next day we went to another little boy's birthday party and then dinner at Friday's that evening. I wanted the staff to sing happy birthday for him but our waitress said they don't that anymore. I was beyond surprised but Aiden didn't know so he didn't care. The night ended with vanilla ice-cream and chocolate cookies.

On the 24th, we spent the day shopping but completely forgot to record any of it. Aiden had fun and had cake all week.

Over the weekend I hosted my second brunch. There were four of us in total so I din't go over board with the food. I had guava pastries, fruits, mini chicken and waffles and a breakfast casserole. The mini waffles didn't at all come out how I pictured in my head but I LOVED the casserole. I found the recipe on Pintrest and the next time I do this I'll definitely tweak it a bit. 


INGREDIENTS
1 lb breakfast sausage (I did turkey)
5 slices of bread (cubed)
8 eggs
2 cups shredded cheese 
1/2 tsp salt
2 cups milk

METHOD
1. Brown sausage. Drain and layer at the bottom of pan.
2. Place cubed bread on top of sausage.
3. Layer with 1 cup of cheese.
4. Blend eggs, milk & salt. Pour over cheese.
5. Spread 2nd cup of cheese on top.
6. Refrigerate overnight.
7. Bake at 350 degrees for 40 minutes. 

Next time I make this I'm gonna add green peppers, onions and maybe tomatoes. Hope you enjoy this as much as we did.

Excessive Dry Skin!

Kyle, my youngest, was born the cutest, roundest, little 7lb baby boy ever! Only because Aiden was born 8lbs. :) He was tiny & pink and loved more than anything in that moment. After taking him home from the hospital and upon closer inspection we noticed that our perfect little bundle had small patches of dryness on his legs.

We asked his doctor on his first visit & were told that it was normal and would go away on its own. Well it didn't. At the next couple visits we were recommended Aquaphor. A greasy, Vaseline looking product which to me was only covering up Kyle's dryness and not really treating it. We were then recommended to use Aveeno. Now while this worked to some extent, it wasn't working well enough. Partly because while the moisturizer was great, we weren't using the right body wash. We were using the regular Aveeno Baby shampoo and body wash instead of the moisturizing version with cleanses without drying out the skin. We were finally getting somewhere. We went from moisturizing every couple hours to only twice a day. This eventually grew monotonous. 

One day my mum gave me three miniature bottles of Vitamin E oil! A light bulb instantly went off in my  head! Vitamin E is a natural moisturizer that can be used in the hair, on the skin, for your nails & even consumed! 

That night, after bath time, I made a mixture of Kyle's Aveeno lotion & a few drops of the Vitamin E oil in the palm of my hands and began to lather him with it. I could instantly see the difference. After an entire week of using the oil mixture his skin was baby soft. I started using it on Aiden as well, for all the little scars he had from playing & falling during his 5 year life span, and it cleared those right up! 

A lot of the times we buy all these over priced items assuming it will work because of its price tag, but really, all we need sometimes, is our mothers help.
